Great weather is a significant slice of a memorable travel experience, and thankfully Israel has it in spades. Even the “winter” is relatively uneventful and lasts for a mere three months or so. Winter
While winter in Israel is not dramatically cold, there are scattered rain showers during the months of December through mid-March or so. Most days are even keel and still offer opportunities to even sit beach side for a warming coffee or indulgent lunch. Sitting at Manta Ray in Tel Aviv with panoramic views of the Mediterranean easily makes you forget which season it is. If you are looking for an actual ‘winter-like’ experience in Israel, your best bet is to head up north to Mt Hermon, where it may or may not snow, but the general atmosphere is cozy and there are plenty outdoor and indoor activities for enjoying the stunning landscapes, including sledding, skiing, snowboarding, mountain biking and hiking. The Mt Hermon Ski Resort is open for snow sports about 50 days out of the year, so the window of opportunity is short, but sweet.
Spring
The spring season in Israel is one of the country’s finest, where the temperate weather bids everyone outside for fruit-picking, various alfresco festivals and even the first dips in the Mediterranean after the winter “break”. This is the best time to go winery-hopping and the areas around Zichron Yaacov and Binyamina are full of regional wineries that offer classic wine tastings accompanied by delectable, locally-made nibbles – from artisanal chocolates and fruit jams to freshly-basked pastries. Tishbi Winery has an on-site restaurant well-worth the stop and all the wineries offer tours and visitor’s centers for delving deeper into the history of the area.
Summer
There is no denying it – summer in Israel is hot. And while the beach is always an option, taking a day trip to the Herzliya Marina and charter a boat for the day to sail the high Mediterranean waters is really a treat. Fall
When the summer heat dies down, fall in Israel is truly enchanting. The high holidays bring a festive mood to the country as a whole and activities and celebrations are always buzzing about in Tel Aviv’s public communal areas like Rabin Square and Sarona, as well as quaint neighborhoods like Neve Tzedek and Basel Square. This season’s culinary bounty is at its peak from mid-September through late November – with a colorful abundance of farm-fresh fruits and vegetables on display. This is the ideal time to go for a foodie day trip in the Upper Galilee Region. Take a market tour with renowned Israeli chef Erez Komarovsky, and use your bounty to cook with Komarovsky in his home kitchen, where hands-on classes focus on anything from bread-baking to seafood delights – and culminate in a multi-course meal, paired with local wines.
